Masala Omelette 马萨拉煎蛋
Masala Omelette is a popular Indian dish available in every Indian food stall around Malaysia. Very easy and fast to make, for breakfast or as a side dish. This unfolded omelette with crispy, bronzed edges and a soft middle is so delicious even on its’ own.

8 eggs 蛋
250g red onion 红葱头
150g yellow onion 黄葱头
1tbsp chilli powder 辣椒粉
1tsp turmeric powder 黄姜粉
1tsp rock salt 山盐
1 pinch white pepper powder 白胡椒粉
5tbsp oil 油
Dice onion into three different sizes.
Give all the ingredients in the bowl a good mix.
Place a large nonstick frying pan, over medium-high heat, and add 5 tbsp oil.
When the oil is shimmering, pour in egg mixture, ensuring it is evenly distributed in the pan.
Lower the heat to medium. Place the lit and wait for a minute.
Divide the omelette into 8 pieces. Once it is brown around the edges and appears to have set, carefully flip with a spatula.
Allow it to cook for 2 more minutes.
